Fred Berkmiller came along to the April Salon event to tell us all about the Budding Chefs events, which took place in Edinburgh in March 2014. Now, it’s time for the return leg, with some of Scotland’s best emerging talent heading for France.
Along with Craig Sandle, executive chef of The Pompadour by Galvin and Galvin Brasserie de Luxe, Fred is leading a small delegation of young chefs from a selection of Edinburgh’s best restaurants.
This year’s crew includes talent from The Bon Vivant, Cannonball, Ondine and Scran & Scallie, as well as from the Monachyle Mhor Hotel in Perthshire.
With a stop in Paris to showcase the finest Scottish produce to a small group of Parisian guests, the focus of the trip will be sampling the larder and meeting the producers of Brittany, based in and around Dinard, and its culinary academy at Lycée hôtelier de Dinard.
Their rich and varied programme of events will include various challenges that blend the French and Scottish cooking traditions and celebrate excellent local ingredients. There’s some Michelin-starred magic woven in, too, with trips to Le Coquillage and L’Auberge du Pont d’Acigné.
